Long Tail Red Snappers inhabit deep waters up to 400m., at which depth they produce a clean and moist protein with a sweet and rich profile. Their fillet thickness allows perfect portioning and a remarkable plate presentation. Their beautiful deep pink to red skin also crisps wonderfully, and deliciously. Their bones provide a rich ingredient for soup stocks, consommes, and fumets.

       FlavorThe long-tail Ruby Snapper has a brilliant sweetness with a perfect flaky texture. It is at the top of the Snapper realm in terms of being table fare, the meat is light, sweet, flakey, gleaming white. The short-tail Ruby Snapper has similar characteristics, the meat is more brownish.
